Learning to Make Rawesome Food!

Wowy time flies when you’re cooking!  Since the beginning of March I have been enrolled in the Culinary Nutrition Expert program taught by Toronto Nutritionist Meghan Telpner. This is an extensive course in which I will complete over 50 hours of classes and workshops. The group of wonderful gals, and Sam, our one lone brave fella,  that I am taking the course with are amazing. We meet every Monday and Wednesday to learn, cook, chat and make amazing food.

Here are some of the highlights:

 

It’s not all raw ‘cooking’ but my absolute favourite meal so far has been the Raw Food class. Several of the pictures are from that meal: Zucchini Spaghetti and Walnut Balls, Guacamole Stuffed Peppers, Flax and Avocado Live Crackers, and Raw Cocoa Strawberrie Sandwich Cookies. I literally couldn’t eat that meal fast enough, it was Rawesome!

Also very exciting is my recent purchase of the world’s most amazing blender, the Vitamix!! I think I’m in love…

This lovely piece of machinery makes the smoothest smoothies and fluffiest mashed cauliflower ever made.

So I’ve been having a pretty awesome couple of months and when I’m finished in June I’ll be a Certified Culinary Nutrition Expert which is the perfect compliment to my Holistic Nutrition training. I’ll be sharing my nutrition knowledge far and wide, especially the blog.

Lorax Love

It was certainly an action packed weekend!

My first adventure was to attend the Blogger Meet-up at La Commensal organzed by Morgan at Life After Bagels. It was a great opportunity to meet local bloggers and to ask their advice. We talked a little about managing the work/blogging balance and I picked up some good tips for maximizing my time. We also talked about doing product reviews on blogs which isn’t yet relevant for me, but perhaps in the future. Mostly we just got to know eachother and ate some delicious veggie food.

It’s Pancake Friday!

OkOk i know I’m a few days late, but I couldn’t resist sharing my Pancake Tuesday dinner with you.  Let me start by asking ‘What could possibly be better than an entire day devoted to pancakes?!’

I love pancakes. Unfortunately my attempts to make them delicious whilst making them healthy is usually an epic fail. But this is why I’m excited to share my pancakes with you this time, I found a solution!

In honour of Pancake Tuesday I decided to finally open the local organic pancake mix, Grainstorm, that I purchased at the Evergreen Brickworks Farmers Market this summer.  This delicious pancake and waffle mix contains stone-ground Kamut, spelt and oats. And they source the grains from Ontario!  A home run! http://www.grainstorm.com/

A Peachy Keen Time at the West End Food Co-op Cannery!

 

Last week I attended a canning workshop by West End Food Co-op, and it was fantastic! If you have taken a look at my first blog post, Inspiration, you’ll see my initial inspiration for starting this blog was meeting Diana Bockus. Diana grows and preserves enough food each year to eat all winter, trade with local farmers, and give away as gifts. So I’ve wanted to learn how to preserve for a while now and this local food co-op cannery was the perfect opportunity.
